Potatoes is considered the king amongst all vegetables as one can have it in any form like aloo puri , masala aloo , french fries , aloo tikki , aloo pakoda and the list goes on….! This masala aloo is a road side snack , where boiled potatoes are tossed in hot spices to give an additional taste to potatoes. In fact while cooking this recipe one can not resist from tasting at least one potato because of its spicy, saucy, tangy aromas, I am damn sure you will not wait to complete the whole recipe… as I do the same thing ….:)
400 gm potatoes
4 – 5 tomatoes chopped
1 tsp Ginger garlic paste
1/2 tsp cumin seeds
a pinch of turmeric powder
1 – 1 1/2 tsp red chilli powder
1/4 tsp garam masala powder
coriander leaves for garnishing
1 tsp tamarind pulp
1/4 tsp sugar
salt as per taste
Boil, peel and cut each potato into a cube shape.
Heat oil , add cumin seeds ,let it splutter ,now add ginger garlic paste , saute for a minute .
Now add tomatoes and cook until they are half dried up.
Add salt , turmeric powder, red chilli powder and fry for few minutes till oil seperates.
Add boiled potatoes and tamarind pulp ,garam masala powder , pinch of sugar and saute for a while until the gravy sticks to the cubed potatoes.
Garnish with coriander leaves and serve hot .
Add chili power according to your taste and its hotness.
PREPARATION TIME : 20 – 25 Minutes.
SERVES: 4 – 5 Persons.
