Mutton Frankie / ROLLS

Frankie is one of its kind with a range of varieties, like veg Frankie, potato Frankie, paneer Frankie, mutton Frankie , chicken Frankie and so on and on, the list is endless. Mutton Frankie is the classic one and is being served from ages. Frankie is an Indian bread rolled  with mutton tossed in hot spices and flavored onions.Try out this old classic recipe to refresh your mood.

INGREDIENTS:

  • 250 gms lamb ( mutton ) boneless
  • 1 onion chopped
  • 2 peeled and  chopped tomatoes
  • 1/4 tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp red chilly powder ( you can add 1 tsp more if your red chilly powder is mild hot )
  • 2 tsp ginger garlic paste
  • 1/2 tsp garam masala powder
  • 1/4 tsp cumin powder
  • Coriander leaves for garnishing
  • Oil

INGREDIENTS FOR DOUGH:

  • 1 and 1/2  – 2 cups all purpose flour
  • 3-4  tbsp ghee ( clarified butter)
  • Salt

ADDITIONAL INGREDIENTS : 

  • 2 onions finely chopped
  • Chaat masala
  • 2 nos finely chopped green chilies
  • 6-7  tsp Vinegar
  • 4 eggs

  • Boneless chicken breasts
    1/2 inch piece
  • Refined flour (maida)
    2 cups
  • Salt
    to taste
  • Oil
    2 tablespo
  • Onions, chopped
    2 medium
  • Ginger paste
    2 teaspoons
  • Garlic paste
    2 teaspoons
  • Coriander powder
    2 teaspoons
  • Turmeric powder
    1/2 teaspoon
  • Red chilli powder
    2 teaspoons
  • Tomatoes, chopped
    2 medium
  • Fresh coriander leaves, chopped
    2 tablespoons
  • Lemon juice
    2 tablespoons
  • Eggs
    4
  • Onions, sliced
    2 medium
  • Chilli vinegar
    4 teaspoons
  • Green chutney
    8 teaspoons

HOW TO MAKE MUTTON FRANKIE / ROLL

  1. Wash mutton and chop into small pieces.

2. In cooker , heat 2 tbsp oil add ginger garlic paste , saute for a minute Add onion and fry until translucent , now add tomatoes  , salt , turmeric powder, coriander powder, chilly powder and saute for a while or just add evrything in cooker like chopped mutton ,spices, chopped onions,chopped tomatoes, ginger garlic paste, oil ( 1 -2 tbsp) and close the lid.

 
3. Whistle it on high flame by adding 1 cup water  , then reduce the flame for more 2 – 3 whistles to go.Off the gas , let it come to room temperature , now open the lid and check if mutton is done.
 
 
4. Once the mutton is done , add cumin powder and garam masala powder , let it simmer for 5 – 7 minutes, now dry the mutton gravy on high flame as the consistency should be thick. 
 
 
5. Knead the refined flour , salt and half ghee, now add water little by little and knead it into a soft dough.Cover it with a damp cloth for 15 minutes, now again knead it for few minutes so that it becomes more softer.
 
6. Divide the dough into equal parts and roll out each into a roti not too thin nor too thick. 
 
 
7.  Roast them one by one on hot tawa with few drops of oil . Beat the eggs well and pour some of the eggs onto the roti and let it set , once the egg is set on roti, flip it upside down  so that eggs get cooked properly.( if necessary add few drops of oil after flipping it ) 
 
 
8. Make the onion salad by adding vinegar and  green chilies just 5 minutes before serving, Now place the egg side of the roti as the surface on the serving dish  , place the mutton filling  in the center , now place few onion salad , sprinkle few coriander leaves , sprinkle some chaat masala and roll it tightly. Serve Mutton rolls hot .
 

NOTE: 

  • Add red chilly powder in the mutton rolls as per your preferences.
  • When you buy lamb meat , ask the butcher for raan ( thigh ) portion  as its best for frankie.
  • Kneading the flour into a soft dough is really neccessary, as this will make your chapatti soft and shall not have small break through nor shed flakes after the roti is wrapped into a frankie.

PREPARATION TIME : 40 – 50  Minutes:
SERVES:  6 Persons .
Divide the dough into eight equal parts and roll out each into a roti. Roast them one at a time on a hot tawa. Whisk the eggs well. Pour some of the eggs over the roti and allow it to set.
